HIgh Altitude banana bread

Banana Bread Recipe

2 loaves

Ingredients

1 stick unsalted butter, melted

1 and 1/2 cups brown sugar

2 eggs

1 cup milk

1 tsp vanilla extract 

1 tsp baking soda

2 tsp baking powder

1/2 tsp salt

3 and 1/4 cup flour

3 mashed, very ripe, bananas

2 T. cinnamon sugar

 

Directions

Pre-heat the oven to 350 degrees.  Grease and flour 2 bread pans and set aside.  I use the baker's cooking spray that already has the flour in it and have never had an issue with sticking.  Mix the melted butter, sugar, vanilla, and eggs together until well blended.  Add the flour, baking soda, baking powder, and salt, mix.  Add bananas.  At this point you can add any nuts or chocolate chips that you might want to add in.  Divide the batter equally between the two bread pans and top with 1 tablespoon each of the cinnamon sugar.   Allow the bread to rest for five minutes before baking.  Bake from 50 minutes to one hour, or until a tester comes out clean.  I have success at just about 55 minutes of cook time.  This bread freezes very well!
